Yves Roy has been interning at Les Pieds sur Terre (Valentin Morel) for a year, learning with the best Poligny has to offer. He recently started his own winery named Nøvice focusing on organic and biodynamic farming and no adjectives and minimal intervention during the vinification.

His wines are delicate, and the vinification unusual (direct press Poulsard, Maceration Savagnin...). Yves got the help from the beautiful community of wine makers from Jura, in collaboration with the best, Sanchez oenology, Ganevat for some barrels, Valentin for the work in the vines...
