Professor in the agronomic school, Paul always been convinced of working the vines with the most respect of the nature is the best way to make the best wines. Paul has been in a lot of part of the world for few NGO and not for wine.
Back on his land, and proud of it he released his first vintage in 2018. Paul own few plots on the appellation of Irouléguy, all less than a hectare (“Mahastittipia”, 30 ares for 1200 trees, “Sorhueta”, here 60 ares for 3000 trees, or also “Uhaldia” and “Itharaco”, with 1600 and 1500 trees). All of this making the force and character of the wines, ending up with a blend of 70% of petit manseng (50% on grès, 50% on chalk), 20% of petit courbu on chalk and 10% of gros manseng on ophite de Keuper.
